"to Die For" Cake/icing/filling Combinations????

I am looking for some really, really good Cake/Filling/Icing combinations for my sisters wedding in August.

Any suggestions? We're going to do smaller 2 tier centerpiece cakes on each table, so we want a variety of combinations.

I've found some good cake recipes and some good filling recipes, but haven't had a lot of luck with icing recipes that I really like with them!

Suggestions please!

I usually just use the BC or fondant. I figure the majority of what they are tasting is cake and filling anyway...a little bit of BC isn't a big deal. Plus, I think that is what people are used to. If you want to change it up a bit, you can always flavor the BC (white chocolate, almond, etc.)

A couple weeks ago, I did a cherry cake with whipped chocolate ganache filling. My SIL-to-be LOVES chocolate covered cherries. She asked for a plain cherry cake with cherry filling but "wished there was some way to make it taste like choc. cov. chery". I told her I would see what I could come up with. I even put thin layers of melted chocolate above and below the filling (to help keep cake from getting soggy and..) to give a little crunch. It was awesome!!!!!

I have two very popular cakes....vanilla chocolate chip cake with cannoli filling, and I also do a Reese cake, chocolate cake, Reese cup pieces and peanutbutter buttercream YUMMY!!! Another popular cake I do is strawberries and bananas with vanilla mousse...just some ideas....hope that helps..

I also had a layer of the whipped cream cheese icing in the recipes on CC. I added seedless raspberry jam and some raspberry extract to really bump up the flavour and a drop of pink food coloring to make it a pretty pink colour. I also spread some raspberry jam on the cake layers before putting the fillings on. When the cake was cut it looked great.

Customers usually ask for WASC with a cheesecake filling layered with raspberry puree.

Friends favorite is my Tropical Dream cake with pineapple mousse.
Family favorite is my Orange Dreamsicle cake with vanilla mousse.
Children's favorite is th Rainbowlicious (vanilla cake colored 6 diff colors layered atop each other)

My favorite is Strawberry Lemonade - strawberry cake marbled with lemon cake and fillied with cheesecake lemon cheesecake and strawberry puree.

This may sound odd, but I really like Red Velvet cake filled with raspberry jam (I use seedless raspberry Polaner All Fruit) and iced in white chocolate buttercream...it really is very good!

My sister decided on a pumpkin cake with a chocolate ganache filling and an icing flavored with cinnamon extract for her wedding. Reminded you of a pumpkin chocolate chip cookie. Mmm...

I just did these for a bride and they certainly were delicious:

WASC with apricot filling
Lemon cake with raspberry filling w/ lemon buttercream
orange cake with chocolate ganache/buttercream filling

I don't generally flavor my IMBC, but here are my faves:

Chocolate cake with peanut butter mousse

Almond genoise brushed with raspberry syrup and filled with seedless raspberry preserved and whipped white chocolate ganache

White cake flavored with creme brulee CoffeeMate, brushed with vanilla flavored simple syrup, filled with fresh caramel sauce and bavarian cream

Chocolate cake filled with kahlua mousse and espresso meringue

Lemon coconut cake filled with lemon curd and coconut dacquoise

Chocolate cake filled with coconut flake filling and almond dacquoise (like an Almond Joy)

Spiced chiffon cake with white chocolate eggnog mousse filling

Yellow cake filled with rum-spiked vanilla pudding and fresh strawberries

I could go on...

Get The Cake Book--almost all the recipes for these are in that book

I got a LOT of compliments on a cake I did-- and then repeated for someone else. I used the chocolate cake recipe from Cake Decorating for Dummies, but added a little espresso powder and a little brewed coffee for added "moistness". I used a cream cheese frosting with peppermint flavoring. I think it was one of the frostings from this site, but I am not sure which one. It may not be an unusual combination, but it sure was popular with those who tried it.

Anyone have any suggestions for using the chai tea cake or filling?

My husband LOVES chai tea, but I'm not sure how to use the recipes I've found...

One of my most-requested layer cakes is Cake Mix Doctor's Bacardi Rum Cake, but I bake one of the layers as a pineapple-upside-down cake with the pineapple rings and cherry halves in the bottom. I bake, cool and put the rum glaze on both cakes, then assemble so the pineapple part becomes the filling. It's especially good if you use DH orange cake mix instead of yellow mix!!!!

For vanilla chai cake, I add some vanilla chai CoffeeMate to the cake batter, then I mix my own chai spices and add them to the buttercream filling. Brides love it!

and just did as the poster said and used pistachio Jello pudding in a "yellow" cake mix. I think I used the International Coffees? chai tea mix. Sorry, not a chai drinker, but it sounded interesting (always in search of flavor!!) Everyone loved it...different than my usually rich cakes/fillings, but definitely goes into the "keeper" pile.
