I would use a pound cake recipe that could be made into chocolate

I don't know what your carving but I would make sure it was cold (put in the frige) and make sure your cake is very dens recipe (like Pound cake) I did a shark cake I filled the cake then put it in the frige then carved it and covered it with fondant and that was in July in Texas. it did great.

Yup, just made a handbag out of that recipe (about to post the pic in a moment!), the trick is to freeze it before carving. Hope that helps!
