I'm making a cake covered in chocolate covered strawberries and I have mixed opinions about storing. I would think to keep the strawberries in the fridge until right before delivery, but would the condensation ruin the chocolate? I've seen a ton of chocolate covered fruit so I know there's a successful way to pull this off. Any thoughts on where I should store the fruit after it's dipped?
I dip the day I am using the strawberries. If you do the day before (must be stored in fridge) it causes them to start to weep. I would still store in fridge after dipping until you place on cake.
