when making cupcakes, I have noticed that I prefer boxed mix over from scratch the scratch recipies I have used seem very heavy and not light and fluffy. I want my cupcakes to look pretty but also taste good. When it comes to business is it a big no no to use box mix
many bakeries use box mixes and doctor them -
I do scratch and sometimes I do box mixes for my cupcakes, depends on what I want and how much time I have. Try your favorite scratch recipe and cook it for less time, maybe you need to mix less, or you are not creaming your fats/sugars long enough. If you use a scratch mix for cakes and they come out light & Fluffy they should for cc's too.
