What kind of cheesecake are you making?

A New York style cheesecake can support fondant without a problem. icon_smile.gif

I think I would be more worried about how the fondant handled condensation from being refrigerated for a couple days. I've seen fondant covered cheesecakes in the gallery though. Can you do a small test cake?

Elegant Cheesecakes covers their cheesecakes with white chocolate "paper". Their work is amazing.
