I put Satin ice on a cake that has been in the fridge and it immediately started sweating like crazy. It is really hot and humid here and I have no air conditioner. This cake is due at 6:00 this evening. What am I going to do?!!

You could try putting a fan on it....that's all I can think of...

I have the same issue here and I didn't even refridgerate my cakes. Its just so humid out. I have 5 cakes sitting here covered in fondant (half satin ice, half michelle fosters fondant recipe). But chilling makes the sweating worse. The best thing you can do is as PP mentioned and keep in a place that is cool but not humid and put a fan on it. But fondant is a bear in the summer humidity.

try corn starch (not icing sugar) and sprinkle it on the cake, and try rubbing it in as best you can and do the fan thing like the other suggestions. Corn starch will absorp the moisture and not leave a white film (like icing sugar will)
