I am making a castle wedding cake for a wedding on Saturday afternoon. I have to have it done by Friday evening because I am working Saturday morning.

I am baking today, but I was wondering if I can also ice it with buttercream. Will it stay fresh? Should I cover it? I am using buttercream that has a stick of butter in it, will it spoil?

I'm sorry about all of the questions, this is my first wedding cake and I am starting to stress.

You're fine to ice it today -- in fact, the icing will seal the cake and keep it moist. Your buttercream will also be fine - the sugar acts as a preservative.

Your cake will be beautiful!
