Butter Rum Cake/icing

Hello my fellow CCers!! I am in need of a butter rum cake and or filling recipe. I have a 8" cake due and I do not have a recipe icon_surprised.gif Any suggestions? Thank you In advance!!

Hi!

This a very good rum cake recipe. I used it for my brother's birthday and he loved it. I used real rum (no extracts and no substitutions). I used the glaze as specified in the recipe. It was an all time favorite.

Thank you! What would you suggest for a frosting? this will be an 8" decorated cake?

I don't know maybe something not too sweet. With the icing is perfect so it's hard for me to think on adding something else.

Hmm.... I will have to think on that. Possibly a bettercreme with a butter rum flavoring? Hmm.... any other suggestions anyone??

i like my rum cake with lime curd filling... if you want to do just a buttercream maybe lime, praline, or I think creme brule (made with the coffee creamer) would be delicious

The last rum cake I made, I used a mixture of SMBC flavored with Whaler's Vanilla Rum and a shortening-based buttercream. It was so good!

My favorite rum cake recipe is this Almost Tortuga one:

Thank you ladiesicon_smile.gif I was wondering....the recipes all call for a bunt cake pan, but I want to do this in two 8"rounds. Will this work?

It's worked fine for me. The Bacardi recipe I used a few years ago in a sheet cake pan; the Tortuga one I made recently in two 6" rounds and one 4" round.
