So I have been asked to run a bakery as an independant baker in a kitchen that has yet to be built. The owner of the building is putting in a deli/bakery and has asked me to come up with a list of all the equipment needed for a commercial kitchen.
Where do I start? Are there some brands of equipment that are better than other? Any I should stay away from? What are some good sources for equipment?
ANY information you can supply will be sooooo appreciated.

The type of equipment you need will depend on what you are planning to make. Are you just making cakes or doing other bakery items as well?
hippiemama--Thank you for a reply. I will be making and decorating cakes, cookies, brownies, cupcakes etc. I know the basics such as stove oven, frig, freezer just wondering about brands--good ones, ones to stay away from, sources etc.
