I want to sugar coat strawberries. does anyone know what to use to make the sugar stay on ?

Maybe a little piping gel? It is edible, shelf stable, easy to find, and goodness knows it is sticky enough

I would dip them in heated/not hot, but melted currant, or apricot jelly first. This will allow them to stay fresher longer.
