Does anyone have a recipe of a chocolate cake appropriate for carving?

It depends on the size of what I'm carving, but I like the Cream Cheese Mint Chocolate Pound Cake recipe from Choc From The Cake Mix Doctor. I usually substitute melted dark chocolate (by weight) for the Andes mints the recipe calls for.
