does anyone have any ideas? I'd rather not use more confectioners/powdered sugar, because I don't want the frosting to be too sweet!

You can try some corn starch or some flour. The recipe I use (Julie's Less Sweet Buttercream) has 1/2 a cup of flour to 3 lbs of powdered sugar. Also, you can reduce your liquids.

Are you adding a lot of liquid?? I know if I use just butter/shortening, sugar and flavorings it comes out thick. Then just add a little bit of liquid till it's the right consistency.
