Lemon juice=highly acidic, WATER based, generally need a considerable amount to get a lemon flavor

Lemon extract=lemon OIL + alcohol, virtually no acid, very concentrated so very little yields a lot of lemony flavor

Rae is right. They're hardly substitutes for each other. The oil comes from the zest part of the lemon, where most of the flavor is. I'd use the zest to sub for lemon extract. (if you ever need to)

Thank you! I have a recipe that calls for both and I wasn't sure why. I guess I'll be going to the store icon_sad.gif .
