Searching for a rum cake recipe that doesnt use nuts...
anyone have a favorite??
Ive never made one but tasted one last weekend--YUM!
This is my favorite: http://www.recipezaar.com/108524. I've made it in a couple of round pans (instead of a bundt pan). Now, I did go ahead and sprinkle walnuts on the bottom (the cake that I used this with had two flavors, so the layer with the nutty side wasn't on top), but you could definitely leave them off. It is such a good cake!
The only possible negative could be that it is pretty soft and tender. After I brushed on the rum syrup/glaze, I wrapped it up and put it in the freezer for a couple of days. I think that helped make it a bit more sturdy. If you weren't icing it, I don't think that would be a problem, though.
