Pumpkin Butter!!

I was given a gift of fruit basket which had a jar of pumpkin butter (Organic). I don't have any recipes which I can use it in, but don't want to waste it. Can anybody help me with a recipe of a cake, or a cup cake or cookie using that?

You can use it in place of whatever you use apple butter on toast or biscuits. icon_smile.gif

Use it in between a spice or pumpkin cake as the filling. Other wise just spoon it on toast or english muffin.

I love pumpkin butter -- buy it every year at the Cider mill. I like it as a spread on gingerbread muffins that I make in the Fall. It's subtle taste offsets the sharpness of the gingerbread. Basically any recipe involving apple butter you can substitute pumpkin butter. Hope that helps some! icon_biggrin.gif

Thanks for those ideas. I will try it as a filling between spice cake. The one goes fast in my house.

No way in the world would I waste it on my family! I hoard that stuff. It ain't cheap & it's sooooo good. I love it on graham crackers w/ a little cream cheese. Yum. Ok, going to the fridge. icon_smile.gif
