Ok, I thought I knew what I was getting myself into, and then I started planning to make a Debbie Brown cake outta one of her books. I am now completely confused. So maybe you can help me.

What is the difference between Fondant, Sugar Paste, Gum Paste, and Modeling Paste?

Her book calls for Sugar Paste to be used just like fondant, and when I did a search on Sugar Paste I keep coming up with things telling me it is the same thing as Gum Paste. I thought Gum Paste was the stuff that gets really hard, tastes like "pooie" and is used for modeling things. In her book she says that the Modeling Paste is what I think Gum Paste is. I think at this point the only thing I recognize in her book is Royal Icing!! I can't even begin to tell you what a Madeira cake is!!

When I use her books and it calls for Sugar Paste I use Fondant when she says to use Modeling paste I use gum paste. I've never asked the difference so I will be following this one.
