Ganache Help Please

Hi all,

I was thinking of using Ganache as a filling for a baby shower cake this weekend. If I'm covering the cake in fondant, will Ganache be ok for a day or two with no refrigeration? Also, should I frost the insides of the layers with buttercream before putting the ganache in the middle? I don't want it to make the cakes soggy.

No, it wont need to be refrigerated... I don't think it'll make the cakes soggy. Just let it set up enough to be like a fudgy frosting. It should be fine. icon_biggrin.gif HTH

according to confetti cakes cookbook..........ganache is fine for 48 hrs. at room temp.
