Can Swiss-Meringue Buttercream be piped on top of fondant? I only want to write 'happy birthday' on top of a cake and I donât want to make up a batch of Royal Icing if its not necessary.

RI is the prefered method....use 1/2 egg white and a bit of powdered sugar whip up with a fork......then your batch is tiny with no waste!
