I'm making my sister's wedding cake for this upcoming Saturday. I have an 11 month old and limited time to do this. Was thinking of freezing some of my cakes. Will bake and freeze some on Wednesday. I use a very small amount of mayo in my cake mixes to make them very moist. Is it ok to take them out of the freezer Thursday morning to let them thaw while I'm baking the other cakes? Will they keep until Saturday if they have been frozen overnight? Any tips or help would be greatly appreciated.
You are good to go! Yes, they will be moist, tasty and wonderful if you bake them anytime now. Just be sure to wrap them in plastic well before putting them in the fzr. Of course, let them thaw still wrapped up.
