A couple of years ago someone posted a cake that she called Snickerdoodle Cake. My friend loves snickerdoodle cookies so I asked about it. I can't find the post, but I remember the icing just had some
cinnamon added to it. I always thought I'd use that as filling though because I didn't want the brown speckles in the icing unless it's a dessert type cake.

Hope this helps. Good luck!

I make a yellow box mix, while still hot, poke holes in it with a fork, pour 1/2 stick of melted butter all over it, sprinkle with cinnamon and powdered sugar. Super Easy! This cake is ALWAYS, ALWAYS a big hit!
Also, Nestle or someone makes a cinnamon chip,
(like a choc. chip but cinnamon) I have experimented a little bit with adding these to a yellow cake. It was pretty good. I think I would do a box of pudding and milk instead of water next time.
GOOD LUCK

Are you looking for more of a coffee cake, or a cake that can be frosted?

You can go simple by just adding cinnamon to a butter cake recipe (I add 1 tablespoon but I love cinnamon).

I make an orance cranberry spice cake around the holidays that is just my pound cake recipe with cinnamon, a teaspoon of orange extract, and dried sweetened cranberries soaked in Gran Marnier added. Once cooled, I drizzle a glaze made of cinnamon, 10x sugar, and GM.

I think I may have to try that warm cinnamon cake from allrecipes..butter for the shortening and definatley more cinnamon though.

The Cake Mix Doctor book has a Snickerdoodle Cake recipe:

It starts with a white cake mix. You add:

1 cup whole milk
8 Tablespoons melted butter
3 large eggs
1 teaspoon vanilla extract
2 teaspoons ground cinnamon

I've made it a few times. It's really good. If you prefer scratch, I think a white, butter, or vanilla recipe with added cinnamon would work just as well. In fact, I might try that as well. I love cinnamon!

Good luck!

I make home-made cinnamon chips, and add them to a yellow cake batter:

o ½ cup brown sugar
o 2 T butter
o 1 T cinnamon

Brown sugar and butter in non-stick saucepan until bubbly; cook 1 minute. Cool slightly, and blend in 1 T cinnamon. Let cool. Process in food chopper until in fine chips.

I was just reading that cinamon helps even out blood sugar levels, so eating a cinnamon cake kind of doesn't count, right?? icon_biggrin.gif
