Look forward to seeing pics of your son's birthday cake.
That is what we did for my daughters first bday. We made cupcakes, so she could have her own to "smash" (but not have an entire cake). Then we iced with homemade whipped cream (2.5 c heavy cream, 1/4 c. powdered sugar, 1 t. vanilla--beat until stiff). Then we garnished with fresh strawberries. It was good and she loved it and I didn't feel like I was overloading her with sugar. Hope you have a great first birthday and take lots of pictures!
BTW, the cream cheese whipped cream icing sounds HEAVENLY (I can't wait to try it!!). If you actually want to decorate the cake, I'd try that one. The one I posted will be like trying to decorate with cool whip (just gobbing it on and doing swirls, waves, other obscure fluffy patterns ) But we just dabbed it on the cupcakes for a little fun and sweetness. Again, good luck.
