O.k. I want to make the topsy turvy cake like the one in the tutorials. I have attempted this once before and the cake just fell apart. I am using a new recipe but have had issues with its durability in other cakes, so what I am wondering from all you seasoned topsy turvy cakers is what recipes do you recommend. I use the Durable Wedding cake recipe by heartsfire on this site. It tastes great and people love this cake. But this is going to be a large cake and I really need stability. Any suggestions?
Just a note I live in Florida and although it hasn't rained in weeks it is still humid and I think that might affect my recipe but I am not sure how to correct it, any ideas?
