I've baked numerous buttermilk pound cakes, actually people request my pound cakes and for years I never had a flop -- until recently. I used a Sunbeam mixer for years; however, this past fall I purchased a Kitchen Aid. It seems that since my purchase of the Kitchen Aid, that more of my pound cakes turn out as flops than as good. When I turn my cakes out they fall and the outside flakes off. Has anyone experienced something similar -- is it my mixer or me or both? Thanks so much.
With a more powerful mixer, you could be over mixing. I always use parchment in the bottom and run a spatula around the sides before I try to remove the cake.
