Left Over Cake Batter

I have a 6" cake pan in the oven right now and want to make two layers but only have one cake pan. So that one is in the oven right now. What do I do with the left over batter waiting for the cake pan to come out of the oven? let it sit on the counter until the cake is cooled enough to remove or put the batter in the refrigerator? Please help!

I let mine sit out. I have only one 6 inch also, so I have this problem too! Never had a batter go "bad" from sitting out for a while. Happy Baking!

WHen I baked at home, I would have all of my cake pans filled and sitting on the counter waiting their turn in the oven. So leaving it sit shouldn't cause a problem.

I do not let my cakes cool in the pans (don't have time for that). My cakes are trimmed while in the pan and flipped out onto the cooling rack within 2 minutes of coming out of the oven.

And get another 6" pan. Well worth it just in oven-electricity savings alone! thumbs_up.gif
