I just had a very large wedding cake order cancellation. The bride had 6 different fillings for her cakes, some of which are my least requested. I have already purchased the sleeved fillings and was wondering if they can be frozen and for how long? I really don't want these sitting on a shelf for a year before I need them!

Thanks!

I froze some sleeves of raspberry filling (sorry don't know what brand - they were just marked with the flavor).

When thawed the consistency was different; it looked like cottage cheese. However, a quick zap in the microwave returned it to pre-frozen perfection.

Thanks for the info. I will place them in the refrigerator...I'm assuming that will extend the shelf life some.
