How Far Ahead Can You Make Fondant Pearls?

How far ahead can you make fondant pearls and still have them be soft? I am making a wedding cake that will have them on the bottom borders. Thanks icon_biggrin.gif

Hi Sue --

I've found a lot depends on humidity. It's spring where I am, and the pearls can sit out for a week, easily, and be firm, yet not hard. In winter, they'd be quite hard after a week. If you have AC you could perhaps control your humidity levels.

Also -- I use MMF, which tends to stay softer longer.
