I'm making 24 mini egg cakes using the wilton pan for a friend and decorating them w/ bc to be placed in a basket full of jelly beans. I'm baking on Thursday and they'll be picked up Sat to be eaten on Sunday. I'm worried that they'll be dry by the time they're ready to be eaten. Is there anything I can do to prevent this?

They will be fine, that is....depending on the cake recipe.
Just make sure they are well covered in saran, and kept in an airtight container in the fridge.....they will be very good on sunday. I can keep cakes for up to 7 days without drying out.
Thanks! I appreciate the help! I've never done cupcakes or mini cakes in advance before. I feel much better...and I'll be sure to have a good moist recipe. Any suggestions?
