Last night, I thought it would be a good idea to mix my buttercream while putting my child to bed. Well, I accidentally fell asleep with the mixer going. (about 45 minutes) And although the texture of the buttercream was smooth, after all that mixing, it won't crust. Is there any way I can revive it? I made 5 quarts of it!
Yes, you can overbeat your b/c and the results are exactly as you described.
However, your mistake is exactly the technique used for making whipped b/c frostings.
Might want to try adding more powdered sugar to a small quantity of frosting to see if that restores the crusting ability....
