I know that this has probably been discussed before, but I would greatly appreciate it if someone could give me some advice here. I need to make cupcakes for next Sunday, but will not have any other day to work on them except Wed. night. I am making them for a friend and would need to give them to her on Thurs. Wouldn't the cupcakes be too dry by Sunday, if made on Wed. night? Also, I have never heard of freezing them decorated. What is the best way to handle this?
I recently tested filling, decorating (just a big swirl) and freezing cupcakes. Short term they do great. for longer than a couple of days, you need a good airtight container and they still do fine.
