So what do you think folks? Do I make a 10" square cake and cut and arrange it into a cross and call it 40 servings? The Wilton cross only serves about 12 people right? You'd think I'd have this down pat by now!! NEXT year I will be ready as I am making real design quotes and invoices for everything I do this year.

Cake sizes are one of the hardest part of my whole thing, making sure they will have enough without screwing myself (pardon my French).

I use The Chart, but hate going between "Party" size and "wedding" size, so I usually end up averaging them out and charging that as the per serving charge.

or how about just do a sheet cake and use this template???

just use the size sheet that gets you closest to the number of servings you need.

and for a more impressive cake -- can make it a double layer
