If you wanted to do something a little different you can also take a Bugle's and fill with ganache or frosting, stick it to a chocolate cookie and dip the whole thing in chocolate for a little witches hat!

Grandma G.....I was just thinking today about what I can make for a holiday cupcake. I was thinking more of Christmas though....ugghhhh......I'm getting ahead of the Thanksgiving, isn't it just awful!!! Hi guys, have been lurking on this thread for about the last 3 weeks or so and am desperately trying to read as many pages as possible!! (taking some time, I can tell you!!)
I live over in the North East of Scotland and am absolutely LOVING all the recipes and hints that you guys are posting!! I've been an avid baker for years ever since I was a little girl baking with my Grandma and in the last couple of months I've been seriously baking for customers.
I eat, sleep, dream and breath cakes. Is that bad? Unfortunately there are ingredients that you guys use that I cannot get over here but I am trying my hardest to find things that work in the same way!!!
We are snowed in here today so i am making some Scottish Tablet to take to the shop that I volunteer in tomorrow (hopefully by then we will be able to get out!!).

We don't have Bettercreme here nor do they sell a huge amount of boxed cake mixes (think at the most there are 3 Betty Crocker ones!!). which is a huge pain as some of the doctored recipes that are posted I cant try but they all sound soooo yummy!!

Bettercream is also the same as ..I believe pastry pride....and I think under one more name that's real close to being the same as bettercream..

Did everyone enjoy their holidays? As well as holiday baking? It's monday night and the snow blizzard is on here in the northeast. I'm looking forward to getting back to a "regular" schedule now that the holiday are over and that means trying to finish reading this HUGE cupcake post!

Help with doctoring a cake mix & frosting.

I wanted to use juice concentrate, would it best to use a white cake mix or a yellow / butter cake mix ? What would be the good and bad of using each one ? & how much concentrate should i use ?

Also when making frosting / icing Whats the difference between using unsalted butter vs using shortening? Would it be best to mix combination of both ?

If it was me I would use a white cake...when I add flavors I add them in place of the water in the recipe.
I still add the oil but replace the water with my new liquid of choice icon_smile.gif
It may be fine with a yellow cake as well but I like that you can really see the coloring when you add it to a white mix!
Not only tasty but pretty as well.

HOLY COW it's taken me a week to get through pg 90, so I apologize in advance if someone has asked this... I made the Double Chocolate Layer Cake (from Gourmet) last night and it had a weird floury texture to it. Everything else about my cupcakes was perfect, except for this after taste. Has anyone else had this problem with this recipe or clues as to what I could change?

I think I've only made it once and I don't remember why I didn't want to make it again but it obviously didn't work out for me either. Here is a link to the recipe with reviews. It looks like it works for a lot of other people though and I noticed it is one of the highest rated chocolate cakes here on CC.
