I have a bride who has requested red velvet cake with cream cheese filling and I'm not sure what to do. The cake will be covered in MMF so It will have to sit out after I decorate it Saturday night and then all day for the wedding Sunday. Does anyone know of a cream cheese filling recipe that will be okay left out this long? (The cake will be inside and air conditioned building for the reception).
Thanks for your help!!

I have used Cr Ch filling that comes in the sleeve so it is stable for such use.
The only other thing I can think of is to use Earlene Moore's Cr Ch b'cream. That is one that does not need refrig'ing. But to me it does not have much of a cr ch taste.
Oh I remember now, once I had a can of cr ch icing and mix it w/an equal part of my b'c and 1 cup powdered sugar. I can't remember the reason I had canned cr ch icing on hand but it was a good way to use it up & had a good tasteicon_smile.gif
