Hi I have a order for a chocolate cake covered of chocolate ganache but I don't have any idea how to cover it and what's the best recipe for ganache is going to be a 10" and a 6" on top can you help me? TIA.

8oz. semi-sweet baking squares (8 squares)
1 cup heavy cream
1 TBS. light caro syrup
cut or grate chocolate into very small pieces, place in a bowl
heat heavy cream in a sauce pan. Once it's steaming, add the light syrup, stir, and then pour over the chocolate. Whip with a whisk until all the chocolate is melted.
Simple as that!
here is a link...keep in mind it is the quality of the chocolate that is MOST important! Don't use grocery store chocolate chips!
