How To Make A Fish Cake Without An Air Brush?

I have seen so many awesome fish cakes colored with air brush. I do not have that...do any of you know what I could do to achieve a life-like fish without having an air brush? HELP!

When I did my fish I did not have an airbrush. I dusted it with petal dust for the color and then with luster dust for the sheen. The color is not as dramatic as with the airbrush, but I think it turned out okay.
