Need Help W/cupcake Freshness

I love cupcakes but have found when I store them fresh and sometimes unfrosted the tops get shiny and sticky. The tops also taste pasty or undercooked.

So I decided to leave them out to 'dry' before storing them but now, especially with mini-cupcakes, they are becoming DRY inside.

It seems like moisture escapes through the liners too icon_sad.gif

How can I keep them fresh if I make them one or two days ahead? Thank you icon_biggrin.gif

Try freezing them until about an hour before you plan to frost them.

I'll give that a try today. I'm making 48 minicupcakes for a birthday party tomorrow and the ones I made the other day are already dry and I have to give them to the kids icon_wink.gif
