How long do you keep royal icing? What do you do if it hardens? Is it ruined?
Royal Icing should be stored in glass at room temp.
Use as soon as possible. It might seperate in storage. Just re-beat it.
If it gets hard yah, it's totaled What I do then is add some water - just to cover/soften it, then add it to my b'cream I hate waste.
Next time plan how you are going to use it - how many different flowers or plaques or whatever you can make with it to use it up. OR cut the recipe in 1/2.
