We are having a Luau party at work, and I was wanting to make a cake that has a tropical feel to it, something like banana, pineapple or pina colada, something along those lines. didn't know if anyone has a good recipe or cake combination they would like to share.

This one gets tons of raves:

Tropical Dream Cake
1 pkg White cake mix
2 c Pineapple sherbet, melted
1 small pkg banana instant pudding (I used sugar-free)
2 (6 oz) containers Yoplait coconut cream yogurt
3 eggs
1/2 t Lorann Pina Colada flavoring (still great results without this flavoring)
1/2 t coconut extract
1/2 t banana extract

Combine everything at once; mix 2 mins. Bake according to pan size at 325.

Filling
12 oz white almond bark (or chocolate)
16 oz neufetchel cheese
½ t LoRann Pinepple or Pina Colada
1 c whipped Frostin Pride

Melt chocolate and blend with cream cheese. Add flavoring. Fold in Frostin Pride.

OR

Coconut Cream Cake
1 box white cake mix      
½ c milk        
½ c cream of coconut (Coco-Loco)  
½ c butter, melted
3 eggs
2 t coconut extract
¾ c flaked coconut

Mix on medium speed for 2 minutes. Bake at 325 degrees until done. (45 minutes for 6" round cakes)

Wow, this sounds delish, I have to try it. I have an order for a Luau cake in June but I am not waiting until then my mouth is watering already icon_lol.gif Thanks for sharing thumbs_up.gif
