Doctored Carrot Cake.. Anyone??

Im looking for a great receipe for carrot cake that starts with a mix.... I want something easy but tasty... and more then just adding pudding and an egg...

I've heard you can just simply add two cups of carrots to a spice cake mix and it's delic.

I just made a carrot cake, using carrot cake mix (but I strained out the "carrot flavored pieces") and added 2 cups of shredded carrots and it was yummy!!! Oh I also always add a box of pudding to my cakes to make them more dense.

I did a wedding cake a few years ago with this mix recipe by Kraft:

I used my own buttercream recipe for icing though, was scared of decorating with the cream cheese icing.

Everyone loved it and thought it was completely by scratch.

I use the recipe on the back of the box of Betty Crocker Carrot cke mix..... it is pretty much the same as the one that was just posted on line..... REALLY good.... but I don't use any coconut...shudder !
