Can they stay out overnight?? I'm making 60 of them for a shower and want to make them Saturday for Sunday. Can that stay out or should it be refrigerated?

Refrigerate. If there's every any little niggling doubt in your mind - refrigerate.

Beaten ganach is typically heavy cream based - adding chocolate to it won't negate the need to refrigerate properly.

Actually, I know it's too late for this answer based on the original post date, but ganache (whether whipped or not) doesn't need to be refrigerated for about 2 days as long as it's kept at "cool room temperature". Keep in mind for next time icon_smile.gif

yes ive left my out for 1 day if you refrigerate the centers will be hard when you want them to creamie
