A month or so ago a member on here asked for advice on how to build a mousse cake. I gave the what I would do but decided to try the method for myself last night. So away I go to make a sponge cake.

I tried a new recipe for a chocolate sponge cake. More like meringue with some flour than a sponge cake! It really did have the texture of a sock. The chocolate cream cheese mousse I made was quite delicous though and topped with fresh sliced strawberries. Not quite what I planned it to be but edible. Dinner was lovely though... I feel like I haven't cooked in so long! Homemade chicken kiev wrapped with asparagus and bacon and homemade roasted carrot ravioli. The hours I spent in the kitchen felt like minutes. Makes me happy
