I have a cake thiis weekend with whipped white chocolate ganache filling. The cake is due on Sat. morning. It is covered on fondant and I do NOT want to put it in the fridge. I am going to work on my giant "wave" cake on Friday.
How long can that stay out?? Should I do white chocolate buttercream instead??

The heavy cream in the ganache should be refrigerated.
