#1) You are the artist and always have the final say in what you will and will not make. Do not let your clients intimidate you or accept their sob story so you end up creating something you are not happy with or lower your prices until you want to kick yourself.
#2) Get your own special cake flavor and frosting product list from the successful cakes you have already produced and price out the products you offer. Type it up and print it out so you can have it to quote from it whenever you get nervous! Practice telling your client(s) prior to delivery that your 9 inch round serves 20 to 22 people and $X.XX a slice. Your Â½ sheet cake serves 90 and starts at $X.XX a slice. I strongly urge you to go in front of a mirror and practice this until you are comfortable doing this in front of real people.
#3) Never let your client talk you into strange requests, flavor combinations and or designs, because you have not tested them beforehand, nor have you figured out how long it takes to create them. Do your research prior to selling the product. Your pocket book could take the hit in a refund or a discount if you get it wrong or it tastes bad. Or worst yet, you could jeopardize your precious reputation and once that is gone you can not get it back.
#4) When you perfect a new design or flavor combo then add it to your product list and price it out.
#5) It is difficult to be assertive, but grow a backbone and stick by your prices and your product. Request a deposit always. Then your reputation will grow as well as your business.
