HI! I made a couple of cakes about a week ago,

(2) 10 in. and (1) 6in. and both are 3in tall the be exact.

how long will it take to defrost?

If is fully assembled and iced, it would take at least a couple of hours, perhaps longer.

plain cake layers, about an hour.

If you can cut through the frozen cake I don't see why not. Don't put the final coat of icing on until it is totally thawed though. I take mine out in the morning and by noon they are usually thawed out.
