I am going to try my first attempt with fondant this weekend. If I have extra fondant and keep it in an air tight package how long will it last? Should I keep it refridgerated? I plan on making chocolate and white fondant icing. Thanks in advance for your help!

I wrap mine tightly in plastic wrap, and leave it sitting on the counter. I've left it for up to a week, and a little microwave time brings it right back to life. I use MMF. I've never done longer than a week, but I don't see why a little longer than that would be a problem.

I also keep it well wrapped up in an airtight box up to a week.

I apply a generous covering of Crisco, wrap in plastic wrap and put it in a ziplock bag. I usually throw mine in the refrig. but apparently that isn't necessary. It is nice to mix my colored fondant ahead of time to save time on decorating day. (I'm referring to MMF)

Mrs_Morton - what a great idea to color fondant ahead. I can't believe I haven't thought to do that before. Its always such a pain when I'm trying to decorate and have to stop to color.
thanks
