How To Keep An Uniced Cake?

I just bought some fancy, wonderful bundt pans and a pan for making little train cars. Because of the detail in the pans these cakes would look much nicer with piped accents, but no overall icing. Will an apricot glaze or simple syrup brushed on keep them moist but not "icky"? Is there a good cake recipe to use for the little train cars that will remain moist? TIA
