Ok I just made a batch of the marshmallow fondant. I followed the directions and added the melted marshmallow mixture to half the sugar, mixed it up and then started adding the additional sugar. Problem is I only got about 1/2 the additional sugar added before my fondant was starting to really crack and not knead up smooth anymore I put it back in the microwave for about 30 sec and got it to knead up nice, but should I be conserned that I didn't use all the sugar, it is not sticky. icon_confused.gif

Sometimes you won't need all the sugar .. if it works up and its not sticky, then you won't need to work all of the bag of confectioner's sugar into it..

the next time you mix it, it may take the entire bag.. kind of weird how it does, but it will do this icon_smile.gif

Have you taste any of it yet? I can't stop pinching it off and eating it lol

I make MMF all of the time. You will never use all of the confectioners sugar. If you do, it will be dry. My method is to take two cups out of the 2 lb. bag. Melt the mini marshmallows; grease the mixer bowl; dump in the sugar and make a well in the center. I pour in the melted mm and start the mixer. The mixture will be sticky. I then gradually add in about a cup of the saved sugar. The mixture should pull away from the sides and paddle (or hook). It will still be slightly sticky. I then remove it from the bowl; knead in a dusting of sugar (dust your table); put a light coating of shortening over the fondant and store it in a tightly sealed bag on the counter overnight.

Should you find that your prepared fondant is a bit sticky, add more sugar. If it is dry, place shortening on your hands and knead it in until the paste is pliable.

Works every time!!

thanks I was pretty sure when it started getting pretty dry I should stop with the sugar I just wanted a little assurance that I was correct.

It's funny how everyone has their own way of doing MMF. This is my way of doing it. I melt MM & water in microwave. Pour 1/2 of the PS in a greased bowl. Make the well & pour all the MM's in it. Mix it all w/ my hands or use the mixer. I only add about 2 T of PS at a time. I make sure my hands are greased at all times. Then I add 2 T PS every time then knead again. If the MMF starts to get cracked that means to me that I don't have enough grease on my hands. I use the whole 2 lbs of PS. When the MMF is finished it is wonderful! If the recipe says 2 lbs that's exactly what I add. Turns out great everytime!
