I have been asked to make a birthday cake for twin boys that are not allowed to have milk - any suggestions on recipes????

A lot of pound cakes don't have milk in them. Also, you might be able to substitute soy milk in the recipe if they can have soy. Most cake mixes call for water and not milk.

I also think you'd be able to substitute soy milk or a lactose-free milk.

Egg-less, Milk-less, Butter-less Cake

1 cup raisins
1 cup cold water
1 1/2 cups brown sugar
1 tablespoon lard
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon baking soda
2 cups flour
1 teaspoon baking powder

Boil raisins, water, brown sugar, lard, cinnamon and cloves for 3 minutes.
Let stand and cool.
Add baking soda dissolved in a little water.
Mix in the flour and baking powder.
Pour into greased and floured cake pan.
Bake at 350 degrees for about 40 minutes or until cake tests done

Milk-Free Fudge Cake

3 ounces chocolate chips (parve, or dairy-free)
1/2 cup cocoa powder
1 cup boiling water
1 cup club soda
1 1/2 cups sugar
1 teaspoon vanilla
3 eggs
1/2 cup vegetable oil
2 teaspoons baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups flour

Grease 2 round cake pans and sprinkle with flour to avoid sticking.
in a large bowl combine chocolate chips, cocoa powder and 1 cup boiling water, stir until chocolate chips are disolved.
Add 1& 1/2 cups sugar, 1 teaspoon vanilla, 3 eggs and 1/2 Cup vegetable oil, whisking until smooth, add 1 cup of club soda, whisk.
sift together dry ingredients onto a piece of wax paper, (or seperate bowl) slowly add dry ingredients into wet ingredients, whisking to keep the batter smooth.
pour into prepared pans and bake in a 350 degree oven for 25 minutes let cool and frost with your favorite frosting

Egg-free Milk-free Chocolate Cake

1 cup all-purpose flour
1 cup white sugar
3 tablespoons cocoa
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup canola oil (or any vegetable oil)
1 tablespoon white vinegar
1 teaspoon pure vanilla extract
1 cup water

Preheat oven to 350F degrees.
Prepare an 8-inch-square cake pan by spraying with non-stick spray like Pam, or greasing.
Set aside.
In a large mixing bowl, combine all dry ingredients and mix thoroughly.
Add all liquid ingredients and combine with whisk just until blended.
Pour into prepared pan and bake for 30 minutes or until tester comes out clean.
Serve with Fluffy Frosting (recipe #12586 posted separately) or your favourite cake icing.
Note: to make a layer cake, you'll need to double this recipe and bake in two pans.

If it's only milk-free you can substitute any milk and butter with soymilk and dairy-free margarine.
