If I were making a round cake...say, two 8" layers and one 6" layer on top, would I need to dowel it? Or would it be okay to sit on top?

I've done that before and I've just sat it right on top with out a dowel. But if you'll be transporting it, I'd dowel. HTH

If it's just one 6-inch layer (1-1/2 to 2 inches tall), then no, you don't need to dowel. I wouldn't dowel even if I was transporting.

I've done this in the past with a 6 and 9 inch and I did not dowel. It was fine. I suspect this works because of the size of the cakes.

I take the approach of better to be safe than sorry as well. Anytime I stack cakes I ALWAYS dowel. If they were on the small side, I have cut straws and used them though but I always dowell with something
