What Flavor Frosting Under Fondant For A Pina Colada Cake?

I want to make a birthday cake for my MIL and mail it to her. When I asked what flavor she requested a pina colada cake. I found a few recipes, but I don't know whta kind of icing to use, especially since I will be mailing it to Ohio!

Any ideas?

I would use either hi ratio shortening type of bc and/or fondant. Nothing that could spoil/melt etc...

If you flavoured the icing with coconut that would definitely go with the pina colada cake!!

I planned to use a shortening based frosting, but how would I flavor it coconut without using coconut, which would make the icing bumpy?

use coconut extract...my mom loves this with coconut cake icon_razz.gif

use coconut extract instead or in addition to vanilla in your bc recipe ...my mom loves this with coconut cake icon_razz.gif
