I need to find something to use in place of butter in a pumpkin cake I want to make. My husband has had a heart attack and is on a low cholesterol diet. The recipe I want to use calls for 3 lbs. of butter.
Perhaps that's not such a great cake to bake for him them...what about margerine?
That must be a huge cake; 3 lbs. of butter is 6 cups!
Here are some pumpkin cake recipes with good reviews that either don't use butter, or use a small amount. Some don't call for any fat, or use oil or margarine in moderate proportions.
